Zash Country Boutique Hotels
It is a project of restructuring of an ancient millstone in one of the most rich and fascinating countryside of the Ionian coast of Sicily. The renovation has transformed the old manor house, the millstone and the garden into a refined “boutique hotel”, loading each element with new perspectives dedicated to guests. In the prestigious rooms, tradition and the bond with the territory are enhanced through the choice of accurate design elements. Zash is now a country boutique hotel, where historical fragments meet contemporary taste, in an “elegantly silent” project, which brings out the physicality of nature, respecting the traces of the past.
The project tends to enhance the original structure, following the spirit of the place: a country house. The architectural intervention was not very invasive and everything is played on the contrasts. The traces of the past, the dusty plaster, the dry walls in lava stone, the woods of the millstone are in balance with pure and rational volumes that, added to meet contemporary needs, make these ancient places still alive.
The aim was to ensure that at all times, at all points of the structure and at all glances, contemporary additions were perfectly recognizable, so that visitors could “subtract” them immediately and capture the essence of those places. The leitmotiv that guided the project was perception: everything must be perceived as 100 years ago and everyone must feel inebriated by the surrounding nature. This concept has been applied to every environment.
The rooms in the cellar, for example. The perception of the only large space that once contained wooden barrels, with white volumes to delimit the rooms and give them intimacy, remains unchanged.
The rooms have been designed with the intention of surprising the visitor, not with decorations or luxurious furnishings, but in the distribution of very fluid spaces and without clear distinctions between the environments. This precise design will was suggested by the analysis of the traveller’s behaviour, who, in a very short time, must make his own a completely new space.
The whiteness of the rooms, the absolute protagonist of each room, is intended to enhance the landscape that imposes itself with the strength of the beauty that characterizes it. A design choice that is also declined on the furnishings, all “tailored” and site specific, for maximum comfort of guests. Nature at the forefront. Oak wood slats for the floors, large slabs of lava stone for the cladding, accompanied by elements of contemporary design, are the only additions to these spaces that tell the story.
Inside Zash Nature is Zash Nature: a Mediterranean refuge for contemporary well-being. Here nothing is left to chance. An example is the swimming pool, whose stone is the lava of Etna, strong and powerful. The bare feet touch the water and feel the wood, while the warm warmth of the intimate spaces meets the Mediterranean aromas.
There is a sense of arcane beauty in everything, which is generated in the encounter between living matter, lightness and warm elegance.
In this intimate and private haven, the combination of Mediterranean and volcanic influences will make your relaxation unique. But in the Zash SPA, to relive the cult of body and mind care, there is no waste and long lists of massages. You are at the centre, our skilful hands, natural products, volcano stones and garden scents. Then everything remains silent.
An unusual location for receptions strictly chic but with a rustic flavor. Refined elegance, excellence of culinary proposals, impeccable service and attention to every detail make Zash one of the most exclusive places for a wedding that seeks a place of class. The areas are varied and can be customized according to specific requests and needs. There is the possibility to organize the event in three different locations: the swimming pool, the citrus grove and the millstone, so you can enjoy a place where only the fragrance of orange blossom and the hidden sounds of the countryside will interfere in this bucolic atmosphere.
Zash Country Boutique Hotel has 10 rooms in all. These are located in three different positions of the structs: 4 are inside the main house, 3 are located in the cellar, while the last 3 are immersed in green.
4 rooms are distributed on the first floor of the old manor house, characterized by high vaulted roofs and all enjoy huge windows in chestnut wood, overlooking Mount Etna on one side and the Ionian Sea on the other.
3 rooms are located in the spaces that in the past were dedicated to the preservation of wine: the cellar. The design action was carried out by inserting white volumes that enclose intimate bedrooms inside, where the cleanliness of the walls and white resin floors contrasts sharply with the existing walls made of exposed lava stone that, skillfully restored and illuminated, brings the visitor back to life the charm of history but from a contemporary perspective.
3 rooms are completely immersed in the green countryside. Large windows make the walls of these rooms the trees of the surrounding citrus. A slightly rockier but very contemporary flavour characterises these rooms, dominated by grey colours announcing the material presence of lava stone, used to cover the bathtub, right up to the headboard of the bed. A remote and refined place.
In an intimate location, where time has stopped, you can give space to sounds, smells and flavors of nature. And that’s how the small and charming restaurant is inserted around and inside the pool, where wine once fermented. This is the “slow” dimension of flavours, space and time, where you can let yourself be transported by hidden atmospheres and genuine tastes. In this scenario, chef Giuseppe Raciti and his staff create new culinary stories, in that unique and irreproachable combination of creativity, tradition and territory.
Chef Raciti has been selected twice for the Italian final of the Bocuse d’Or, the most important cooking competition in the world.

How to reach us
To reach Zash Country Boutique Hotel, coming from the A18 Catania-Messina motorway, exit Giarre, turn left immediately and continue until the crossroads with the S.S. 114 (300 mt.). Turn right towards Catania until you reach the village of San Leonardello where you will find the sign for Carrubba on the left. Cross the whole village of Carrubba to the end, and once you have passed the railway underpass, turn left again for about 2 km. On the left is the Zash Gate at no. 60.
